Baked Parmesan Chicken

Hey all you Pinktastic people out there!  I have been dying to share this recipe for a long time and now I have the perfect outlet on which to share!  I made this tonight for dinner and I can't even begin to describe the aromas that fill the air when this is baking!  It is truly a wonderful smell!  I am sure you have eaten Parmesan Chicken in several variations depending on where you are eating it, but this one is simple to make and tastes like you spent all day on it.  It requires very few ingredients, many of which you probably already have on hand.  Let's get to it!

Baked Parmesan Chicken
You Need:
*2 cups parmesan cheese (shaken from a container, not fresh parmesan)
*1 tablespoon (or more to your liking) of Italian seasoning
*1 teaspoon (or more to your liking) of garlic powder
*3 large boneless chicken breasts (I use Tyson brand and slice them in half to make 6 breasts)
*a little crisco to grease bottom of casserole dish
*Spaghetti sauce (optional....you can put as much or as little as you like on each piece)
*1 1/2 cups shredded mozzarella or provolone cheese


Directions:
*In a shallow dish mix the parmesan cheese, Italian seasoning, and garlic powder together. 
*Pour about a Tablespoon of Crisco into the casserole dish and place in oven while the oven preheats to 425 degrees.
*Slice chicken into smaller breasts and wedge and cover in the parmesan mixture turning over to coat.  Pull out hot casserole dish and place each piece in it.  After I place the chicken pieces into the dish I always sprinkle just a bit more parmesan mixture on each piece of chicken.

* When your oven is at 425, place the dish on middle rack in oven to bake for 45 minutes or less depending on how thick your chicken pieces are.  When I use Tyson, even after cutting them in half, they are still pretty thick.  I also want to make sure the crust is brown and crisp.
*Pull it out of the oven and adjust your oven settings from baking to high broil.  Top each piece of chicken with spaghetti sauce.  (I usually put 2 tablespoons of sauce on each piece).  Then sprinkle with cheese.
*Place under the broiler till cheese is completely melted and beginning to brown.  Allow the chicken to rest for 5 minutes before serving.  Serve with noodles and garlic bread with a side salad!  Yummy!
Well, I hope you all enjoy this wonderful yet simple recipe!  My husband loves this dish and has ever since I first made it.  I am telling you, the aroma alone is worth making it!

I am hoping to be able to share this dish with my "lunchpooling" friend tomorrow, but they are calling for accumulating ice possibly tonight.  I may be enjoying this by myself tomorrow if we have a snow day!  Santa never came to get that stupid Snow Machine!

Dear Santa, I Have a Return!

Dear Santa,
Okay, I have a return.  You need to come pick it up immediately!  When I ordered a Snow Maker for Christmas, I expected one that I could manually turn on and off when I wanted to. 

That was my request as you know, I am a teacher and do enjoy a snow day every now and then.  However; the Snow Maker you brought me seems to run on its own and it won't stop!  Seems like as soon as the snow finally begins to melt away, it turns on and starts spitting out snow once again!  I am to blame for all those snow days and my fellow teachers are beginning to get a little aggravated with this Snow Making Machine of mine. 

As of right now, our school has to go all the way up to June 2.  Could you please come get this machine and take it far, far away.  I don't want it anymore.  It has worn out its welcome!  If you are unable to come get it, could you please, please, please write me back telling me where the turn off switch is?  This is an urgent message to you so please respond immediately as I have a funny feeling that this machine will spit out more snow and ice this week!  HURRY!

Oh, yeah, one other thing....I would like to have in its place an early Spring.  If you will bring that to me, I will take care of your reindeer for an entire week while you and Mrs. Claus go on vacation.  Emma won't mind.  She might be a little scared of them, but they could live in the yard.  You never know, they might actually like our Kentucky bluegrass.

Monkeying Around and Going Bananas!

Well, Emma's birthday party went on without a hitch!  We had a house full of our wonderful family and friends!  Looking around my very full house, I realized how blessed I am to have so many wonderful people in my life!  Emma definately has a lot of people that care about her!  Some of the ideas for decorating and favor ideas I am listing below along with some of the pictures from her party.

Centerpieces - Stuffed monkeys, mini palm trees, and bananas.  The bunches of bananas are also great for holding down helium balloons! 

Decorations - Monkey helium balloons, streamers, banner

Colors - Girls:  pink, yellow, and green;  Boys: blue, yellow, and green

Food Ideas- Monkey Mix (see previous post for recipe), banana pudding, chunky monkey ice cream or banana split ice cream, Monkey Sandwiches (bananas covered in peanut butter and placed in a hot dog bun)

At Emma's party we had pizza, chips, pasta salad, and fruit with cake and banana pudding as dessert.  However, I thought I would share some other food ideas I came across when searching for ideas on other sites.

We didn't play any games since it was mostly adults at the party but you can find a lot of games that revolve around the monkey theme just by doing a monkey game search on the internet.

Now for my goody bags:  I made the goody bags with paper sacks because the brown color looked very natural and monkeyish!  I placed a monkey sticker and each child's name on the outside of the bags.
For the adults:  a bag of monkey mix, a small monkey chocolate sucker, banana candies (which I ordered from Oriental Trading), and a package of Banana Nut Muffin mix.

For the kids: a stuffed beanie baby monkey, banana candies, a large monkey chocolate sucker, a box of animal crackers, a monkey granola bar (found at Kroger), a package of Kroger brand Curious George fruit snacks, a monkey straw cup (also ordered from Oriental Trading), a banana ink pen (also from Oriental Trading).

It was a lot of fun!  Emma got a lot of nice things!  Oddly enough, everyone kept asking, "What does she need?"  Well, since Christmas was just 4 weeks ago, it is difficult to think of anything that a child would need so I told everyone that she loved plastic food, iCarly stuff, and princess stuff.  She got 4 different baskets of plastic food.  We have filled.....and I mean FILLED her little plastic shopping cart with all the plastic fruits and veggies she got...but......she LOVES them!  My husband made the joke the other night, "Well, Missy, you won't need to go to the grocery for a while because we have plenty of fruits and veggies to eat." 







Emma's cake was made by a dear friend, a young girl studying culinary arts.  She did a wonderful job on our monkey cake!

Snowcream White Hot Chocolate

It is snowing heavily!  I gave up on the driveway.  My arms and hands are sore and tender. We are expecting up to 6 inches today through ten o'clock tonight.  I am out of school today with another snow day and will most likely have another one tomorrow.  I already have plans to clean tomorrow and get ready for my little one's big birthday bash! 

I don't look forward to cleaning but do look forward to hosting a "swinging" party with our monkey birthday theme. 

Now, today sounds like a great day to make hot chocolate and snuggle up with a good book or a good movie.  I did promise the awesome hot chocolate recipe that I made for Christmas this year.  It is wonderfully good.  If you have ever made snow cream, this cocoa tastes exactly like snow cream only warm!  Here it is and I am sharing more pictures of my beautiful birthday girl!

SNOWCREAM WHITE HOT CHOCOLATE
you need:
* 2 cups of whipping cream
* 6 cups of milk
* 1 teaspoon vanilla extract
* 12 oz. bag of white chocolate chips

Combine all ingredients in a slow cooker.  Heat on low for 2 to 2 1/2 hours or until chocolate is melted and mixture is hot.  Stir well to blend before serving.  Makes 10 servings.  Serve with french vanilla marshmallows for extra richness. 

I also want to share my Monkey Mix Party Mix that I made for my adult guests' goodie bags that attend Emma's party. 

MONKEY MIX
you need:
* 1/2 box banana nut Cheerios
* 1/2 box honey grahms cereal
* 1 whole box of honey nut Chex
* 1 1/2 jars of salted macadamia nuts
*3/4 bag of the butter flavored pretzels
* 2 cups dried banana chips
* 1 bag of white chocolate chips

Mix all ingredients in a large roasting pan except the chocolate chips.  Melt 1/2 bag of chocolate chips in a ziplock bag for 1 minute and 20 seconds.  Mush with your hand to completely melt all the chocolate.  Cut a tiny corner off one corner and allow chocolate to drizzle over mix working your hands back and forth to evenly dispurse chocolate.  Allow the chocolate to set up.  Break into bite size pieces.  Scoop out the top of the mixture that is drizzled and place in bags for storing.  Melt the remaining chips the same way, in a second bag and drizzle again on the rest of the monkey mix that missed drizzling the first round.  Allow to set up, break apart, and store in bags.  I was able to make 16 bags with 1 1/2 cups of mixture in each.

Cheesy Chicken Tortilla Soup

Well, I promised it to you.  Weather forecast is calling for more snow early Thursday morning for northern Kentucky.  Looks like I will be out of school yet again.  Since they are calling for snow I am sharing this "warming" recipe with you.  This is my own soup recipe that you can change here and there if you wish to your liking.  I won't be posting anything, most likely, tomorrow unless I get the urge to.  My plans are though, to share with you on the next post my recipe for "Snowcream White Hot Chocolate"!  With winter still knocking at my door...warm recipes are a must!  I served it at Christmas and it tastes exactly like melted snowcream!  So check back for that recipe. 

Here is the one I promised to you today:

Cheesy Chicken Tortilla Soup

You Need:
* 3 Large boneless chicken breasts, cooked and diced
* 41/2 cups cooked white rice
*1/3 of the large block of Velveeta Cheese
*1 can of the Original Rotel tomatoes
* 1 box chicken stock
* 6 large flour tortillas
* salt to taste
* Pam cooking spray

For the soup, cook and dice chicken breasts.  Set aside.  Cook your rice and set it aside as well.  In a large pot combine the chicken, rice, chicken stock, cheese, and Rotel tomatoes.  Heat on medium heat until the cheese is completely melted.  To help it melt quicker, when adding the cheese to the soup, cut into smaller cubes.  After cheese is completely melted, allow to simmer to keep warm till your tortilla crisps are done.

For the tortilla crisps:
Take your 6 large flour tortillas (can do more, 6 fits on a pan nicely) and stack them.  Using a pizza cutter or knife cut the tortillas into 1 1/2 inch wide strips.  Slice the strips in half.  Doesn't really matter about the size...you could cut them in squares if you wish....you will be using them for dipping!  Heat your oven to 350 degrees.  Pile the strips onto a baking sheet and spray with the Pam cooking spray, salt to taste.  Toss them and spray once more.  Place in the oven for about 10 minutes or until crisp.  Check them and toss them frequently to avoid burning.  You can either pile them on top of your soup or you can dip them.  Either way, this is a wonderful meal on a cold night!  Enjoy all!

"Lunchpooling"

You've heard of carpooling.....let me introduce you to a neat idea my friend and I do everyday called "Lunchpooling"!  It is the same concept of carpooling only you do it with lunches.  She and I decided to do this one day when we were discussing what we were bringing for lunch the next day.  We take turns bringing the main meal while the other person brings sides or we will take turns packing each other's entire lunch.  It makes it interesting and is a good way to save money in the long run because we all know that if we don't pack, we buy!  Tomorrow, I am in charge of our lunch.  I am packing for both of us, bar-b-que on bun, chips, cole slaw, jello, and a slice of lemon cake.  Wednesday, she will pack for both of us.  We have a lot of fun discussing and planning out what we are bringing.  It is just a way to make packing lunches more fun and interesting.  I highly recommend you try it.  Choose a friend that has similar food interests as you and start planning.  We usually discuss the next day's lunch before we leave school or we call each other the previous night.  Try it and let me know if it changes your lunch habits!

Tonight, I am so glad my daughter went down to sleep.  She needed to hit the hay early tonight.  I love birthdays but sometimes they come with a price.  As you all know, she will turn 2 this Friday.  Unfortunately, I believe she has hit the terrible twos....at least today she exhibited terrible two behavior.  I got "shushhed" about a million times today, told "no" several times, and tonight as I was fighting with her to put on her pajamas she told me to, "shup mommy".  Which in baby talk, I believe was "shut up mommy."  Where in the world did my daughter learn the words "shut up"?  I don't say it, my husband and I don't say it to each other, and I know the sitter wouldn't allow her to tell her to shut up.  I have no idea where that came from unless she got it from TV.  I didn't like it.  It broke my heart to think I have to punish her for that kind of stuff.  I told her sternly, "You do not tell mommy no and you do not tell mommy to shut up."  She cried after that and then I cried because my little angelic daughter is beginning to act as mean as a snake.  All those sweet little baby giggles and cute little snuggles.....out the window!  Hello little Miss. Independent!  I love her just the same...but am not liking this little rebellious behavior streak!  Pray for us!

Well, yesterday was our family's "New House" Anniversary.  3 years ago we moved into our brand new home.  I can remember the day we moved very well......it was COLD!

I am amazed...

My daughter, who will be 2 this Friday, amazes me.  She is like this little intelligent extra absorbing sponge!  She has learned yet another letter in the alphabet tonight.  She now knows letters A, B, C, D, E, H, I, M, O, P, Q, R, S, T, U, and Y.  She is already counting things like our steps that lead into the laundry room, as we climb them together.  Every night I ask her, "How many vitamins do you get?"  She answers, "Two!"  I then say, "If you eat one, how many do you have left?"  She will answer, "One!"  She follows directions well too.  I can tell her to help me clean up her toys and she does.  She places each toy in its correct place.  She knows where her books go and where her toys go.  I can tell her to take things to her room and she does.  I caught her today sitting in her play tent pretending to read a book.  I asked her, "What are you doing?"  She said, "Mommy, look, I'm reading."  She knows every farm animal and what sound it makes and knows some zoo animals too.  It just amazes me that she is so quick to learn things.  I am so proud of everything she is and will become in life.  I look forward to discoveries and accomplishments she will make in her life.  It saddens me that I will be at work on her birthday.  I know she may not realize it is her birthday but I will.  Time has just flown for me.  It seems as if just yesterday I had her.  I am so very proud to be her mother.  She is my greatest accomplishment in life.  I truly am blessed!

Back to Work and I'm Beat!

This morning my school was on a 1 hour delay.  It is amazing how when you get a call at 5:30 am telling you that you don't have to be at work till an hour later than usual, your mind doesn't let you go back to sleep!  I did however have more time to enjoy my morning coffee! 

I am so tired, and am wondering if it is because I woke so early or if it can be contributed to today being the first day I have worked in a few days!  Whatever the reason, I am beat and will be hitting the hay a little earlier tonight!

I want to share with you a great recipe that I really like.  I don't make it very often because no one in my house eats pineapple but me.  When I was expecting my daughter, I craved pineapple.  A family member gave me a recipe similar to this one.  This recipe for Scalloped Pineapple is a great potluck dish that you can take to church or a brunch!  This particular recipe was taken from The Loveless Cafe (from Nashville, TN) cookbook.

Here goes:

Scalloped Hot Pineapple

1 (20 oz.) can pineapple chunks, drained but with some juice, reserve 4 Tablespoons juice in a bowl for later use.
1 (16 oz.) can crushed pineapple, drained
1 cup grated Cheddar cheese
1/2 cup sugar
3 Tablespoons all-purpose flour
4 Tablespoons pineapple juice (from the draining process)
1/2 cup (1 stick) butter
1 sleeve Ritz crackers, crushed

Directions:
Preheat the oven to 350 degrees.  Put the pineapple in a 1 - quart casserole dish with the cheese.  Mix together the sugar, flour, and pineapple juice.  Blend wel.  Pour over the pineapple.  In a skillet melt the butter and add the crushed crackers.  Stir until the butter is absorbed and the cracker crumbs are coated.  Pour the cracker mix on top of the pineapple mixture.  Bake for 30 minutes.  This recipe makes 4 - 6 servings.

Hopefully you will be able to make this dish and enjoy it more often than I get to.  It sounds weird but is so divine!

Another Snow Day Home From School

Today was our second snow day this week.  It seems they are adding up fast!  We are not even into February yet....this could mean a bit of my summer break will be spent behind the teacher's desk!  I don't know what tomorrow brings yet as far as school goes, but if we are out again....I am getting out of the house! 

Today I made some more of those chocolate monkey suckers, only this time they were mini versions.  They are quite simple to make.  Here is how....

I used the Wilton melting chocolates in chocolate and white chocolate.  I also used the Wilton large sugar decorating flower sprinkles.  All I did was lay out my wax paper.  I poured about 1/4 of the bag of chocolate into a ziplock bag, placed it in a microwave bowl, and heated it for about a minute and 15 seconds.  I then mashed the chocolate so the little bits that had not melted yet would melt.  If you have larger bits that haven't melted you can put it back in for another 15 seconds and mash again with your hands.  I then, once the chocolate was completely melted, snipped a very tiny corner off the bag with scissors.  I then used the bag like a cake decorating icing bag and drew circles about the size of a golf ball onto the wax paper.  I placed a sucker stick...I used Wilton's sucker sticks but you could use any kind....into the middle of the circle and covered the stick with a bit more chocolate.  I then drew two smaller circles with the chocolate on the sides of the larger circle to make the ears.  I allowed them to set up and harden for about 1/2 hour.  I then melted the white chocolate the same way and again cut a very tiny corner of the bag.  I piped on the little face which is sort of like a heart sitting ontop of a sideways oval.  I also put white dots for the inner ear.  Before the white chocolate began to set up, I placed one little sugar flower at the top (now if you are doing a boy's monkey party...you may not want the flower).  I allowed the white chocolate to set up for another 1/2 hour.  I then melted just a bit more of the chocolate colored chocolate and dotted eyes, nose, and drew a simple smile.  I allowed them to set up and then wrapped them in sandwich bags tied with ribbon.

If you are pretty good with the bag you could do the same concept with different designs.  I thought of snowmen for winter and ghosts for Halloween.  Actually if you feel comfortable, you could probably free hand anything and put a sucker stick in it!

I was also so excited today when my Oriental Trading order arrived with the remaining Goody Bag items for Emma's birthday party!  I ordered banana ink pens, banana flavored candies, and monkey shaped straw cups!  My Goody Bags are turning out very cute!  Along with the items above, they also have a little Ty Beanie Baby monkey, one of my monkey suckers from above, animal crackers, Curious George fruit snacks which I got from Kroger, and will have a mini banana.  The kids of course will also get to take home their straw cup which I personalized with a black sharpie marker.  Each cup has a child's name on it.

Hibernation in Progress!

Weather man said it would snow....and he was right.  It is snowing currently as I write.  I just love fresh snow.  It is beautiful and reminds me of God's grace.  The way he allows us to see such beauty and the way it just perfectly blankets the earth in pure white....beautiful.  I am sharing a couple of pictures I took from my back door.  We have such a beautiful view up on the hill that it would be selfish to keep all this beauty to myself!

When I am snowed in, it seems I want to start nesting!  It causes me to want to bake and decorate or get crafty!  However; I am not sure I will get much crafting or baking done today....the house needs cleaning.  Oh I wish I could invent a special magic dust you could sprinkle and with a snap of the fingers have your house magically cleaned for you!  I'll just keep dreaming! 

Since I didn't have this blog up and running before, I do want to share with you some of the craft ideas I had for my daughter Emma.  When I was expecting Emma, I knew I wanted a nursery that would transition into her toddler years so I chose a sort of garden theme.  I decided to paint some birdhouses and hang them on the wall.  I also decided to paint posts under them and add removable flower stickers to accentuate the posts. 

I also found the perfect removable quote for her room and it suits her to a tee!  I put it on the opposite wall.  I found it at one of the local Target stores.  The birdhouses I purchased from Wal-Mart and painted in shades of brown, pink, and green and also hot glued ribbon accents on them.

This past summer, I had a dilema.  Emma had a lot of sleepers and clothes I just couldn't part with, but I knew I really didn't want to store them all so I came up with the idea of taking them and turning them into a keepsake quilt.  Now all I have to do is look at that quilt and a flood of memories come rushing back to me!  I can remember the one outfit.  It seemed like everytime she wore it she would spit up on it.  One of the outfits seemed to attract every stain!  And who can forget those little ruffles across the backside that got in the way when I was patting the bottom trying to quiet the fussies?!  I had to save those too!  I took the perfect 8x8 square from the outfits (mostly from the backs of the sleepers and fronts of shirts).  I did try to save some of those adorable appliques that make the sleepers and outfits so cute and appealing!  I then sewed those pieces together.  My wonderful mother (who is probably reading this) helped me finish it by teaching me how to add batting, a back (which we cut from a very soft white sheet), and binding.  I love this quilt and have shared the idea with many of my friends who talk about having so many baby clothes stored in boxes! 

If you are a mother and have lots of baby clothes you just can't part with, I highly recommend this craft idea.  I am not a seemstress by any means.  My only training with a sewing machine was in Home Economics class where I made one pair of shorts that fell apart the first time I wore them, but if you can sew a straight line, you can make this quilt....even if all you do is piece together the top and pay someone to bind it for you....it is worth it!  Have a wonderful and happy day!

Expecting Snow!

The forecast for tomorrow's rush hour is not looking so hot....calling for 4 inches of snow.  Now, as a teacher, that sounds like a snow day at home with my daughter Emma!  Secretly, I have to say, I am hoping for a snow day.  I would love to have a day to play more with blogging (and of course play with Emma, sit around in my pj's all day and enjoy my cup of coffee instead of guzzling it down)!  We shall see what tonight and tomorrow morning brings. 

Today, at school, my students acted like it was Monday!  Everytime I would ask a question, I would get these blank looks.  They were looking at me....and may have been hearing my voice....but they were still mentally in bed.  I'm assuming it may have been the upcoming snow that caused the zone out!  I even had a student this morning tell me, "My mom said we weren't going to have school tomorrow"!  I just cracked up laughing.....now, not only do I have administrators to call off school, but I guess parents are doing it too!  I just found it funny.

Last night, I counted all the letters that Emma knows.  She now knows 15 of 26 letters and she is only 2 years old.  She just impresses me more and more everyday with how quickly she is picking up on things!  As a teacher, I recognize that a 2 year old learning 15 letters of the alphabet is quite an accomplishment and it scares me a little......is she learning so fast that she will be one of those bored children in the classroom that chooses to misbehave?  If so.....look out future Kindergarten teacher!

Tonight I am fixing homemade Beef Stroganoff using a recipe I sort of threw together (which I love to do).  I think I will share it.....

Beef Stroganoff
*1 pound extra lean ground beef
*8oz. cream cheese
*1 cup sour cream
*1/4 cup parmesan cheese
*1 regular size can cream of mushroom soup
*1 regular size can beef broth
*1 cup milk
*garlic powder to taste (optional)
*1 teaspoon of dried dill
*Egg noodles (as needed per person)
*Durkee Dried Onions (as garnish/topping)



Directions:
Brown your beef in a large electric skillet. 

Add cream cheese, sour cream, parmesan cheese, both soups, milk, garlic powder, dried dill and allow mixture to simmer till melted and well mixed. 

It will be runny and sauce like (sort of like spaghetti sauce consistency). 

Boil your desired amount of egg noodles per person and drain.  Plate the noodles and top with desired amount of the beef sauce. 

Top by sprinkling the Dried Onions on top as a crunchy topping.  Enjoy with a side salad and french bread!  YUMMY!

Well, maybe I will be able to work more on this blog tomorrow while hibernating inside!

Welcome to The Pink Pumpkin!

This is my first post!  I am new at blogging but hopefully will enjoy this adventure!  I named this blog with my daughter in mind....pink because, well, she's a girl!  And Pumpkin because everynight before she goes to bed she will say, "Love you" and I always say, "I love you pumpkin!"  I thought it was catchy!  Yesterday I took pictures of Emma with my camera that I got for Christmas.  I am sharing some of my favorite pictures!





Emma's Second Birthday Party Planning is well underway!  We are going with the Pink Mod Monkey Theme!  I have made some adorable chocolate monkey suckers for the guests!  A picture of the monkey suckers is below!
 I also made a Happy Birhday Banner from Scrapbooking Paper!  It was super easy but time consuming!  I am sharing the site which gave me the wonderful idea!

Last night I tried a new recipe that was quite tasty!  It was for Manwich Casserole.  Now, I know it sort of sounds heavy and unappetizing but upon tasting I discovered it was really good!  The crescent rolls add a unique sweetness and combines well with the zesty Manwich!  The recipe is below!

Manwich Casserole
1 lb. ground beef
1 can Manwich
2 cans crescent rolls
2 pkgs. shredded cheese

Heat oven according to biscuit instructions. Brown ground beef. Add Manwich and simmer. In baking dish cover bottom of dish with a layer of crescent rolls, then a layer of cheese. Add Manwich mixture. Top with a layer of cheese and the last can of crescent rolls. Bake according to instructions on crescent rolls. Let cool 5 minutes.
